Ingredients
- 1 onion
- 4 medium size carrots
- 5 pieces of celery
- Extravirgin olive oil
- 1 cup red wine (Sangiovese)
- 1lb ground beef
- 1lb ground pork
- 1 glass of red wine
- 3 cups passata (tomato puree)
- 2 tbs tomato paste
- Salt
- Black Pepper
- Parmesan cheese
- 8 oz pasta (I used high protein & high fiber Brami)
Steps
- Dice onion, carrots, and celery.
- In a pot on medium heat, add olive oil and onions. Add a pinch of salt until the onions soften.
- Add in carrots and celery until they start to soften. Pour in a cup of red wine and allow it to simmer.
- Once you stop smelling the wine and it cooks off, add in the ground meat.
- Stir in the tomato paste and passata/tomato puree.
- For the pasta, boil a pot of water, salt it like the ocean, and cook until it is al dente.
- Transfer the pasta over to the meat sauce, add a little pasta water and stirl.
- Top with parmesan, black pepper, and serve!
