Ingredients
- 1 cup arborio rice
- 6 cups pho broth
- 2 shallots minced
- ½ cup white wine
- ½ cup grated parmesan cheese
- 2 tbs olive oil
- 3 tbs butter
- 1 tbs oregano
- 2 tsp black pepper
Steps
- In a pan on medium heat, pour in the olive oil.
- Add the minced shallots and let it cook for 2 minutes until soft.
- Add in the arborio rice and make sure the rice is covered in olive oil and shallots.
- Pour in the white wine until the rice absorbs it.
- Slowly add in the pho broth ½ cup at a time. After each pour, stir the rice until it absorbs all the broth.
- Once all the broth has been absorbed, cut the heat and add the butter, parmesan cheese, oregano, and black pepper. Mix until it is completely incorporated.
- Top with additional parmesan and serve.
