- 300g “Tip 00” flour (~2cups)
- 3 room temperature eggs
- Braised Beef
- Pho broth
Steps
- On a clean surface, create a well with the flour.
- Crack the eggs into the center and scramble with a fork, keeping it contained in the well.
- Once the yolks are incorporated, slowly add in more flour from the inner side of the well.
- Whent he mixture becomes thick, mix in the rest of the flour with your hands and knead.
- Knead the pasta dough until you have a smooth ball.
- Cover in plastic wrap and set aside at room temperature for 30 minutes.
- With a rolling pin, roll out the dough ~⅛ inch thin.
- Cut into small squares, fill with bits of braised beef.
- Fold diagonally, seal the edges, and close the bottom corners.
- Boil a pot of water, salt it like the ocean, and boil the tortellini until they float.
- Transfer the tortellini into a bowl, cover in pho broth, and serve.
