Ingredients
- 2 lbs bone in chicken thighs
- 1 lbs chicken wings
- 4 cups of carrots
- 4 cups of red potato
- 2 lemongrass stalks
- 5 cloves of garlic
- 2 shallots
- 3 tbs curry powder
- 4 tbs fish sauce
- 1 can of coconut milk
- Kettle & Fire Chicken Bone Broth
- 6 cups water
- Avocado oil
- Salt
Steps
- Marinate the chicken in diced lemongrass, garlic, shallots, fish sauce, and curry powder.
- Peel and cube the red potatoes and carrots.
- Add avocado oil to your pot on medium-high heat and add chicken skin faced down. Allow the chicken to cook for 15 minutes.
- Add 3 cups of water, Kettle & Fire Bone Broth, 1/2 can of coconut milk, carrots, and potatoes. Adjust the stove to medium, cover and cook for 45 minutes.
- Add the rest of the coconut milk.
- Serve with rice or a french baguette.
