Vietnamese Curry

Serves: 6

Ingredients

  • 2 lbs bone in chicken thighs
  • 1 lbs chicken wings
  • 4 cups of carrots
  • 4 cups of red potato
  • 2 lemongrass stalks
  • 5 cloves of garlic
  • 2 shallots
  • 3 tbs curry powder
  • 4 tbs fish sauce
  • 1 can of coconut milk
  • Kettle & Fire Chicken Bone Broth
  • 6 cups water
  • Avocado oil
  • Salt

Steps 

  1. Marinate the chicken in diced lemongrass, garlic, shallots, fish sauce, and curry powder.
  2. Peel and cube the red potatoes and carrots.
  3. Add avocado oil to your pot on medium-high heat and add chicken skin faced down. Allow the chicken to cook for 15 minutes.
  4. Add 3 cups of water, Kettle & Fire Bone Broth, 1/2 can of coconut milk, carrots, and potatoes. Adjust the stove to medium, cover and cook for 45 minutes.
  5. Add the rest of the coconut milk.
  6. Serve with rice or a french baguette.
