Ingredients
- ½ small watermelon
- ~6 cups arugula
- Parmesan cheese
- ½ cup pine nuts
- 2 tbs dijon mustard
- 2 tsp whole grain mustard
- 2 tbs white wine vinegar
- 2 tbs olive oil
- Pepper
- Salt
Steps
- Cut the watermelon into small cubes and place in a large salad bowl.
- Add in the arugula, pine nuts (toasted), and parmesan cheese.
- For the dressing, combine the dijon mustard, whole grain mustard, white wine vinegar, olive oil, salt and pepper.
- Mix, dress the salad, and serve.
